Food is at the center of the world’s most urgent challenges and largest opportunities. However, the chemical diversity of food is largely unknown. Our understanding of how diet affects human health is limited to 150 nutritional components, a fraction of biochemicals present in our food. The Periodic Table of Food Initiative has a vision to create the next revolution in food and transform contributions of diet diversity to sustainability and human health. It will do so by democratizing standard analytical methods, discovery and user driven research for development. The Periodic Table of Food knowledge base will spark innovation and create impacts in the intersections of food, agriculture, nutrition and health.
